email errors log

Hi,
I'm using KeyHelp and the DNS are on CloudFlare. In general seems to be working but I'm having some email errors on log, for example:
What's the best practice to configure reverse DNS, PTR, etc and how to do it right?
And is there any place to check logs for all IN and OUT emails? Or should be manual using command line?
