Is there any way to make a language default? Istead of always have to change the from English to the other language, is possible to just mark the default and would always be selected?

The user can choose the preferred language. (top right corner)
The software said: Requires Win Vista®, 7®, 8® or better. And so I installed Linux.

But all clients will be in the same country. Is possible to make any language default? Or take off other languages?

Sure.
Login as admin, go to "Configuration" -> "Appearance" -> "Languages" and set your preferred language as default.
