I don't have emails sent from my sever, so I want to disable the unnecessary (for me) services of email management like Dovecot and Antispam etc.

How can I disable them ?

When I go to:
Server Service Management and click the stop button for these services they keep popping back up !?

The Antivirus I managed to stop using the "Maintenance Intervals" tab

I would not disable them as many other services rely on a mailserver (SMTP) be present to sent error messages.

If you want to stop emails comming in (most usefull in my opinion) simply block the ports in the firewall.
Then those service run but don't do much and can't get anything incomming, however they can still mail you in case of problems.

Just block the IMAP, SMTP, POP etc incomming ports.

And in config by Email server, turn off Spam-training and Virus scanner, then it won't do much.

Antivirus can be stopped in total in config -> Antirus -> Disable it.

The few servers that still run won't take much resources or memory, but you can gain problems with several other parts if no SMTP server is available.

I guess you mean the section on the screenshot in the first post of this thread?

Many menu items of the left menu have been moved (since KeyHelp 23.1.1) to "General -> System Status", there you can find it below "Processes -> Server Service Management".
